Croque-monsieur

the Croque-monsieur is a popular Parisienne fast-food snack, or sometime breakfast popular at sidewalk cafes and midnight bars.

Croque-monsieur loosely translates to "crusty mister" and is basically a french grilled ham & cheese sandwich with a notable exception: the cheese, usually gruyere, is melted on the outside of the bread.

 where a single slice of bread is used,
 the sandwhich is, of course, open faced.

 sit a fried or poached egg on top of the cheese and the sandwich changes gender, it is now a croque-madame, or "crusty madam". why an egg makes it female? don't ask.

the side is always lettuce and tomato, french fries and mayonaisse.

in Paris i established a routine. most mornings, breakfast at the Conte Cafe in the Latin Quarter on Rue Gregoire consisting of Croque-monsieur, lettuce & tomato english-style with a splash of lime juice, french fries light, no mayo --- and forgive me Mayor Bloomberg a large Coke with lemon. . . . 

later several cups of cafe au lait and a book, most recently Game of Thrones,  with the occasional glance at the gorgeous, long-legged passer-by's . . . . ooo la-la, être jeune à nouveau!

at the end, before the walk-away, a final buzz-boost: an demi-tasse espresso "puya" (no milk, no sugar) and a cold glass of water.

 voila! je sois ready.

3 tablespoons butter, melted

4 thick slices white, wheat, or sourdough bread

1 teaspoon Dijon mustard

2 ounces Cabot Extra Sharp Cheddar, grated

2 ounces Comté cheese, grated

1. Heat a heavy 12-inch cast iron skillet over low to medium-low heat. Meanwhile, spread ½ teaspoon of mustard on the two bottom slices of bread and then sprinkle evenly with the grated cheeses. Top each with a remaining bread slice, pressing down gently to set.

2. Brush sandwich tops completely with half the melted butter; place each sandwich, buttered side down, in skillet. Brush remaining side of each sandwich completely with remaining butter. Cook until crisp and deep golden brown, 5 to 10 minutes per side, flipping sandwiches back to first side to re-heat and crisp, about 15 seconds. Transfer sandwiches to a cutting board and slice in half with a knife. Serve warm.

Would you eat this? We're not sure. KFC is planning to offer the Double Down, a new sandwich made of bacon and cheese covered in Colonel's sauce held together with two pieces of fried chicken. Yup, there's no bread in this piece of art. Consider yourself lucky for once if you live around Providence, Rhode Island or Omaha, Nebraska, because those are exactly where KFC is testing this heart-attack inducing sandwich.
This is why America is great and this is why you're fat.
